MADISON — Phil Sandoval has paired with Huntsville restaurateur Kumar Patel to bring his Mexican Restaurante into the Power Brands Hospitality Group.
Mayor Paul Finley, the Madison Chamber of Commerce and Sandoval cut the ribbon for the restaurant on U.S. 72 in the Shoppes of Madison, in front of Target.
Sandoval opened the first Phil Sandoval’s with Huntsville restaurant icon David Martin in 2008.
“I have been going at it ever since,” said Sandoval during the grand opening this week. “Being in the restaurant business has been a long-time passion for me. I was a server for a long time and helped with my mother’s bar before she passed away. I even learned a lot from my grandma who was in the business.
“The Huntsville community over the years has been fantastic and now we have received a warm homecoming in the Madison community.”
Phil Sandoval’s is known for its signature tacos al carbon, shrimp enchiladas, and shredded pork burritos. The traditional items – stuffed chili, tamales, chimichangas and fajitas – are equally as appetizing.
Diners should also take advantage of Phil’s Phamous Margaritas and a Huntsville favorite, the Mambo Taxi margarita mixed with sangria.
Sandoval said next on his menu is opening a restaurant in Huntsville’s Jones Valley. However, due to supply chain issues that delayed his Madison opening, he was noncommittal on the date.
“We survived COVID,” he said. “But the supply chain is still a very big issue, getting equipment in here and even merchandise.
“But here we are, and we are excited about finally getting open in Madison.”
Michelle Epling, executive director of the Madison Chamber of Commerce, said she has had wonderful experiences at Phil Sandoval’s over the years.
“I am so excited to welcome Phil Sandoval’s to the Madison Chamber of Commerce and our family of restaurants,” she said.
Finley said he received a lot of feedback when word got out that Sandoval’s would be opening in west Madison; and now those same folks are excited it is open.
“One of things I appreciate is great food and a great atmosphere, but Phil, you are also a great community person,” said Finley. “I have been to many events where you catered the food and I have even bumped into you offering breakfast at early morning events, even though you are not open for breakfast.
“On behalf of the Madison City Council, we are glad to have you guys as part of the Madison community.”
