HUNTSVILLE — Le Macaron French Pastries Café is opening a location in Huntsville’s Blue at Valley Bend in Jones Valley. The business, which has a shop at Bridge Street, is expected to open its Valley Bend store in late September.
Not to be confused with the American “macaroon”, which is a coconut cookie, authentic French macarons are small, round pastry shells called pillows, rich in flavor. They are made from ground almonds and soft meringue, lightly crisp on the outside and smooth and creamy in the middle. The creamy center can be filled with a rich ganache, flavored cream, or homemade fruit concoctions.
The menu features more than 20 flavors of macarons and frequently includes seasonal flavors and limited time offerings to celebrate holidays and special occasions with a thriving catering and corporate gifting business that operates at a brisk pace year around.
Known as “Michèle and Pascal”, the Huntsville franchise owners said they plan to have live music, giveaways, face painting, games and more details to be announced for the new opening.

Macarons have grown in popularity around the world in a short span of time; in fact, consumer reports indicate the French macaron’s market penetration has grown 13 times its size over the past 10 years.
With a swathe of Le Macaron franchises opening recently in Indiana, Massachusetts, Tennessee as well as Alabama, Le Macaron French Pastries has solidified its brand as the No. 1 French patisserie and authentic macaron franchise in the United States according to Restaurant News.
