J’adore les cookies! Le Macaron to open French pastry café at Valley Bend

HUNTSVILLE — Le Macaron French Pastries Café is opening a location in Huntsville’s Blue at Valley Bend in Jones Valley. The business, which has a shop at Bridge Street, is expected to open its Valley Bend store in late September.

Not to be confused with the American “macaroon”, which is a coconut cookie, authentic French macarons are small, round pastry shells called pillows, rich in flavor. They are made from ground almonds and soft meringue, lightly crisp on the outside and smooth and creamy in the middle. The creamy center can be filled with a rich ganache, flavored cream, or homemade fruit concoctions.

The menu features more than 20 flavors of macarons and frequently includes seasonal flavors and limited time offerings to celebrate holidays and special occasions with a thriving catering and corporate gifting business that operates at a brisk pace year around.

Known as “Michèle and Pascal”, the Huntsville franchise owners said they plan to have live music, giveaways, face painting, games and more details to be announced for the new opening.

“We are delighted to welcome new franchises to the Le Macaron family,” said Le Macaron founder Rosalie Guillem. “Michele and Pascal are highly motivated and looking forward to interacting with guests as well as the communities they serve.”

Macarons have grown in popularity around the world in a short span of time; in fact, consumer reports indicate the French macaron’s market penetration has grown 13 times its size over the past 10 years.

With a swathe of Le Macaron franchises opening recently in Indiana, Massachusetts, Tennessee as well as Alabama, Le Macaron French Pastries has solidified its brand as the No. 1 French patisserie and authentic macaron franchise in the United States according to Restaurant News. The brand is revolutionizing the retail bakery sector with an elegant concept that provides “little luxuries that make people smile”.

As a recent customer commented, “There is a lot packed into this small shop … Lavazza coffee – Score!”

In addition to macarons, the bakery makes a variety of chocolates, eclairs, madeleines, napoleons, gelato and cakes; as well as, beignets, candied fruits and affogato. There is also a full hot and frozen coffee and expresso bar.

Le Macaron’s traditional music and European-style décor offers customers the experience of an inviting, sophisticated Parisian café.
